Coconut Chia Pudding with Mango

Ingredients:
Coconut milk-good source of vitamin c for skin elasticity and help rejuvenate the skin.

Chia seeds-pack with antioxidants, omega-3 fatty acids, high in minerals and vitamins, which strengthen skin barrier and produce healthy collagen.

Mangoes-contains collagen amino acid, vitamin E, and beta-carotene. Good source of antioxidant too.

Desiccated coconut-rich in fatty acids and an antioxidant that can promote skin radiance.

Maple syrup-can help reduce blemishes and increase skin hydration.

Vanilla extract-can help calm irritated skin.

Step 1: How to cut mango Cut the sides away from the pit. Make crosswise cuts in the flesh. Cut or peel the segments away. Cut away the pit and remove leftover mango flesh from the skin.


  
 

             

Step 2: How to make chia pudding Combine coconut milk, chia seeds, desiccated coconut, maple syrup and vanilla extract in a jar or bowl and give it a good whisk. Set aside for a minute, then whisk again. Cover with a lid and refrigerate for at least 1 hour (or overnight).
 

Step 3: Top chia pudding with mango purée. Just put the mango pieces in a blender or food processor and blend until smooth first. Remove the chia pudding from the fridge. Give it a stir and spoon into dessert jars and then top it with the purée. Top with desired toppings and enjoy!

You can put any topping your heart desires. The example shown only got passionfruit, raspberries, and red currants.
